Proximity on the keyboard. Z for undo, X is used for cut, C for copy, and V for paste. All four keys right in a row.

Ctrl P is already for print.
Ctrl V is for paste the "V" & "C" are next to each other on the keyboard.

Because Ctrl-P is already used for Print so they just had to pick another letter instead.
