Jerusalem artichokes. I grew those in Nevada and they went nuts.

But I also had lots of success with beans, peas, zucchini, tomatos, radishes, peppers, and artichokes. As long as you have access to enough water, lots of stuff will grow fine in dry climates.

Pumpkins, squash, zucchini, watermelon and rockmelons (cantaloupe) do very well in Australia. Regular garden water needed.
