fungi of the division ascomycetes which includes many 'yeasts'
Saccharomyces crevisiae and saccharomyces ellipsoidens is used in industrial manufacture of bread and wine/root beer respectively.

I know Yeast is used is Wine and Bread. I not sure about Root Beer having Yeast.
Sugar I do not think is a living organism.
I know wine use friut and bread use grain and root beer is from a root of some type.
So, I not sure of the proper name, but, will say "Plant Life".

1 cake, compressed yeast
5 pounds, sugar
2 ounces, sassafras root
1 ounce, hops or ginger root
2 ounces, juniper berries
4 gallons, water
1 ounce, dandelion root
2 ounces, wintergreen

There are specific yeasts for specific wines; hock or Chablis for dry light flower wines, sauterne or tokay for sweet light wines, Nalaga Madeira or sherry for tawny sweet wines such as strawberry, etc.
