I often dont have time to do it properly and use soap as I was taught when learning the trade, and the water should rinse off anything there anyway surely.

Not only is this totally wrong, it's grounds for a health inspector to shut down your facility. (Yes, I've had a health inspector follow me into the restroom to confirm that I'm properly washing hands before returning to work.) I'm sorry, but I hope you do elect to change your ways.

no. If someone wanted to go to your resturant i think they would think that the food is fresh, well cooked, and not dirty. Also if i found out you weren't washing your hands enough i would totally never come to your resturant again
