I would recommend The Establishment on George St (near Bridge St). It's a bit up-market but is good for meeting people.
The Orient in Circular Quay is good if you want a drink and a game of pool.
Lastly, the Martin Place Bar (near Elizabeth St) has REALLY nice bar girls and good music.

That depends entirely on what you are looking for. Most people who are doing bars will go to three or four.
