I'm arriving from Vancouver at 11:30am and want to catch a train from Euston at 2:00pm. Will that be enough time to clear immigration & get my bags and catch a bus/tube to Euston? Or should I catch the 4:00pm train?

You should have time. Give yourself say and hour to clear customs and pick up you bags and get out of heathrow....take the tube then you don't have any problems with traffic (if there are any, which can vary greatly).

I travelled from Heathrow to Kings cross (just after Euston) and it took about 40mins to and hour and you have to change trains once (see link). So going with the greatest times, you still should have time to get there.

You might be pushing it trying to catch the 2pm train. If you're not in a particular rush it may be better going for the later train to allow for delays in landing and delays getting through customs. Customs and baggage claim doesn't usually take too long - 30 to 60 minutes but there can be delays.

If there's no delays you'd be able to catch the 2pm train but the 4pm option provides a buffer and should give time to make your way their at a more leisurely pace.
