OK, this is odd, because I was JUST wondering the same thing about 10 minutes ago. I'm not a big fan of mayonnaise at all. In fact, it sort of gags me to just smell it. Mind you I can tolerate it in things like potato salad so long as enough mustard is used to mask the taste of the mayo. However, I love things like Vegenaise or Nayonaise which are egg-less versions of mayo. I use that on sandwiches to give them a little flavor and moisture.
What I've often wondered is what led to the creation of this sauce of French origin. I've read stories that suggest possible reasons the sauce became known as mayonnaise, but what lead people to the idea of blending oil and raw eggs to make a sauce in the first place?
SO -- Is it necessary? Well, in the big scheme of things, I'd say no, but it has made a fairly large contribution to food and cuisine. I guess I've also made some from scratch that wasn't as nauseating to me as the commercial varieties. I also like other mayo-based sauces such as horseradish sauce.

Mayonaise adds a different taste, just like ketchup, the meat in a burger, the bread that holds a sandwich, and even things like pickles. To some people it's necessary, to others it's not. Whatever tops your sundae.

OK..... First I'd like to say I hate mayonaisse. But in a way it is necessary on a burger to keep the moisture from the tomatoes, lettuce, and pickles or other toppings from soaking into the bun. Thats why when you get a burger from a restaurant its on the bun (or thats where its supposed to be). So its a bun moisture protectant.

It is un necessary, if I need it, then I use the lite mayonnaise dressing it has 10calories per serving. Still to many calories in my opinion but that's what I use in egg salad.

Is ANYTHING really necessary??!! Why didn't you just ask if meat and vegetables are necessary as well? Why not just live off meal supplements and pills??!

it is delicious! Essential for egg salad, chicken salad, coleslaw, and tuna fish. It can also be used as a substitution for butter on a grilled cheese sandwhich.
