For Sea World, I would say that you can see most things in one day. You may have to skip a show or two. It will depend on what all is going on, the time of year, what you are all wanting to see, etc. If you have a full day you will probably be able to see most of the things, shows, etc. If you can find a schedule of the shows before you leave, that can really help. You can then take the map and come up with a route to take so that you will be in the area of the show that will be going on, rather than kind of wondering around lost for a little while not really knowing what to do. A little planning ahead of time can really help.
But again, it will depend if you want to see absolutely everything, the time of year, crowds, etc. For the most part, you will be able to see everything.
Magic Kingdom I would not recommend even trying to do everything in one day. I honestly think that Magic Kingdom needs a minimum of 2 days, more if possible. There is so much to see and do. If you want to enjoy everything and really get to see what the park has to offer, you will want the time. There are a lot of rides, shows, attractions, etc. you will want to give yourself more time. Magic Kingdom is a large park.
If you take advantage of Fastpass and Extra Magic Hours and if you are going during a lower season you could see quite a bit of the park in one day. However, you will not be able to see absolutely everything, and as the other answer said, you will be exhausted by the end of the day. If you give yourself a little more time you will be able to enjoy yourself better and have a great time, which will result in great memories for years to come.
The biggest thing to remember with the Orlando area attractions is that you cannot plan to see everything in one trip. It will take years to cover the surface, and there will still be plenty to do. With the parks, you need to decide what you would rather do. Would you rather see a little bit at each of the parks, or pick a few that will be perfect for your family and spend a little more time at them. Either way, it will give you plenty of options for future trips.
So yes, you could do both parks in one day. However, to really enjoy them and have a good time, I would try to take a little more time, especially with Magic Kingdom.

One day at Magic Kingdom and one day at Sea World? Yes. Pick a day for Magic Kingdom that is open late, they have so much to do, you need to get there when it opens and stay till it closes to do everything. Seaworld, you can do the whole park in like 4-5 hrs, so you'll definately be able to do that in 1 day.

Honestly it depends on when you go and the park hours. If, for example, it opens at 8am and closes at 9pm than yes you can see it in one day, but you will be cranky, exhausted and disappointed because you felt rushed. Typically those aren't the type of memories or feelings you want when travelling or while on vacation.
Theme parks aren't the type of places to do in a day and be over with. There is always something going on - a show, a ride, characters to meet, dining and fireworks :)

Not if you want to see everything... My husband and I spent 1 whole day in Magic Kingdom, and still had to cut out things we wanted to see...

Yes.
It depends on when you get there though. Get there when they first open and try not to see all the shows until the very end. If you don't take too many breaks you should do just fine. And even if you dont see ALL there is to see, you will see most of it.
Go on a weekday if possible, there will be less lines.
