It depends on the rocks you have available. You can build a stone wall out of any type of rock.
If the wall is going to be cemented, make sure the rocks are free of dirt or the cement won't stick.

You cannot build a cement fence out of rock it is impossible!~

Granite. If you use any kind of white rock or sedimentary rock it will tend to break apart easier.

Usually you would use concrete cinder blocks for that.
