Most fish do this. They lose bright colors as the temperature drops. Some appear lighter and some darker because of it.

Lol - dont freeze you betta. I used to have a 1 gallon tank for mine and he used to do the same thing when the water got cold. I felt guilty so I moved him to a community 15 gallon tank with a heater. He thinks he is on a tropical resort now - he likes it alot
