A scullery maid was one of the lowest ranking servants; she spent almost all her time in the kitchen doing the most menial tasks, such as washing dishes, taking out the ashes from the cooking fire / fireplaces, taking out the trash, scrubbing floors, perhaps helping with the toughest cooking chores.

Probably the modern equivalent would be a dishwasher (whether human or machine).

I would expand dishwasher to a broader term of kitchen clean up, the busboy of the 17th century, which included throwing out the garbage.
