I like to make ham. It's so easy, I don't glaze it or anything, just pop it in the oven.
Then I serve it with a savory cherry sauce (from Better Homes & Gardens cook book), deviled Easter eggs (mayo, mustard, hot sauce, and pickle juice, garnished with dill and paprika), potatoes au gratin (boiled potatoes with cheese sauce), steamed asperagus, and salad. I order hot cross buns from a bakery and serve with lemon curd. My MIL brings angel food cake and I serve it with chocolate bunny truffles.

Ham is good and easy to prepare ahead of time. You might want to avoid rabbit (wink) but lamb is also a popular alternative for an Easter meal. Visit the Food TV website and do a search. I know Emeril has several different ways to do ham and I tried the one with citrus fruits last Christmas - YUM-O!

I actually make Easter Breakfast. According to the Bible - Luke chapter 24:
But on the first day of the week, at early dawn, they came to the tomb, bringing the spices which they had prepared. And they found the stone rolled away from the tomb, but when they entered, they did not find the body of the Lord Jesus. And it happened that while they were perplexed about this, behold, two men suddenly stood near them in dazzling apparel; and as [the women] were terrified and bowed their faces to the ground, [the men] said to them, "Why do you seek the living One among the dead? "He is not here, but He has risen.
I like to celebrate Easter early in the morning with Easter Breakfast with my extended family, and then we all go to church together. My church has a "living cross", which is a large wooden cross covered with wire - that all the church visitors can weave or insert cut flowers into. The cross is then hung in church for the service. I have beautiful bouquets at our breakfast table that all of my family members can pick flowers from to take to church to add to the cross.

A lot of people make ham or turkey. I guess it really depends on who you are having over for dinner. My family is Italian so we always have pasta, meatballs and lasagna!
