more than three weeks (so the saying goes) but maybe even months if he isn't stressed too much (as in the jungle or somewhere), although he'd loose a lot of muscle mass from lack of proteins.

You could engineer a variety of cookies that would easily sustain a person to a normal lifespan--or at least a longer lifespan than someone who eats only at McDonalds. Your cookies would need nut and fruit ingredients.

Depends on the kind of cookies. If they were oatmeal cookies with lots of nuts in them, probably quite a while.

Much less time if they were sugar wafers.

long enough if you do not take in account protein malnutrition, hypertension, high cholesterol, obesity,diabetes............and so on. but if the cookies are laced with poison its a different ball game all together.
