I use a live trap, a little cage with a trap door. Just be sure you release the mouse far enough from the house; less than a mile and chances are they'll run back and beat you home!

I would feel guilty using one, which is why I use a 'catch and release' style trap.
Good question by the way!

i feel a little guilty if they dont die immediatly. but the worst i felt was the time i fed a live mouse to my snake. it was squealing while the snake ate it. i was like totally sobbing. so after that i bought frozen ones.
