Yes, you can try programs such as:
Chessmaster 9, Chessmaster 10
Hiarcs/Fritz 8
Nimzo 8

They all allow you to turn off the engine for you to play out a game, or play the game between yourself and let the program analyze the best moves, threats, etc.

Most chess programs have an option for two player play. That would seem to fit the bill for what you want to do.

I usually set up a traditional board and pieces and analyze that way.

It builds up the mind more than letting a computer figure it all out for you.

And you can also claim credit for the annotations ;)
