The simple answer is that the 80GB G5.5 Video model has the largest capacity of any iPod or iPod clone (to get more, you have to lug around a brick that's approaching the size of the Mac Mini). The more specific answer is that you'll probably only use up about 15-20GB of capacity with 5000 songs (music videos will naturally use more capacity, since they contain both audio and video). You could probably get away with buying the 30GB Video model, but if you have a large amount of videos, it might be safer to just drop the extra cash on the big iPod. If you really want to make sure, you could always download a free copy of iTunes, transfer all of your music and videos in, and see how much they add up to. Just be aware that the 30GB iPod is sold by metric gigabytes (1GB = 1000MB, etc.), but iTunes measures its capacity by real gigabytes (1GB = 1024MB, etc.), so it will only report the capacity of a 30GB iPod as being 27.82GB (and some of that will be filled with the firmware).
