I've read that blue and yellow are the most highly-contrasting colors, so if one is available for your background, you might use the other for the lettering.
If you're limited to a white background...either local school colors, or perhaps two-tone letters with medium blue for the outline and yellow for the core. Alternatively...make it festive, and alternate pretty much any color that will show up well against your background.
Philosophically-speaking...far too often, *Thank you* is written in invisible ink! :P

Traditionally it is a red background with gold or silver writing. Can't remember where I heard that, but I did somewhere..
