Defrosting is better really.
I wouldn't eat the head. Maybe you can use it as a candle holder or something.

She should be ok cooked frozen. Just cook her at a slower temp and longer that's all maybe over night at 250 will work. She should be nice and tastey and tender by then.

If you are going to cook her in the crock pot then you don't have to thaw her completely. She can go in partially frozen. I you are going to slow bake her then he doesn't have to be completely thawed. But if you are going to put her on the grill she needs to be completely thawed.

I think you should take her out and thaw her some then braise her in a nice wine and lots of veggies, and pour her over some wild rice. Wall-la!
