Heh, I wonder if I'll be the only one to answer this. Pretty substantial question.
Anyway, friend,
I took all of the A-G required classes.
For math, I started with Geometry in 9th grade, having taken Algebra 1 in 8th grade. Then, Adv. Alg./Trig., Pre-Calculus, and Calculus AP.
English 1, 2, 3, and 4 AP.
Multi-cultural education (graduation requirement), World Cultures, U.S. History AP, and American Gov't AP.
Physical Science, Biology, Chemistry, Physics AP.
I took Art 1, Advanced Art, and 2 years of Art of Video Production.
Spanish 1, 2, and 3.
Peer Tutor, and a year of AVID.
Right, and two years of PE.
So my AP classes were U.S. History, Calculus, Physics, American Gov't, and English 4.

I took most, but not all, of the offered honors and AP courses.

I did do a lot of community service. Probably 400 hours' worth or more. (Sounds like a lot, but it's over a period of 4 years.) I never actually had to count it all up to graduate.

My GPA (unweighted) was about 3.9, and weighted, about 4.1.

I wasn't a part of the official "leadership" class, but I was involved in many other leadership activities.

I was accepted to two other UCs, Merced and Davis. LA rejected me. I got the tip later that I should have applied undeclared (I didn't), because it has a bearing on whether or not they'll accept you.
I was also accepted to five CSUs, which I forget the names of. Cal Poly rejected me.
Cooper Union also rejected me.

I got a full academic scholarship to UC Berkeley on account of my overall performance and income.

I took 4 AP classes, (Bio, Psych, Calculus, Physics) out of about 8-10 offered. I also took most of the available honors classes.
No community service or "leadership" (at my high school it was a joke, just painting signs) but I was in band, color guard, orchestra, and a couple one hour per week clubs, for a total of around 14-26 hours per week of activities (they ask about hours per week on the application!)
GPA was around 4.28 weighted, SAT 1 was 1460 out of 1600, SAT 2 was 680 writing, 700-something for math 2 and chemistry. I was accepted to UCD, UCB, UCSB, UCSC, and NYU, and rejected from Stanford and Columbia.
