December 9th until the 28th are the dates with the best rates.
Book as far in advance as possible. I'm already holding rooms for December 16th - January 1st
Check the travel sites to compare room rates, but book through the hotel. This will allow you to hold a room at a good price then keep looking for a great one. You can always cancel the first reservation that way and make a new one, even if it's the same hotel.

My husband and I go there 2-3 times a year and are moving there this summer.
If you want to go in December, especially around the holidays, (Christmas/New Years), then I would book as soon as possible.
That time of year is usually booked up fast, and in some cases, a year in advance. So I would book it now or in the next couple of months to make sure you have a room.
I use the following site to book all our rooms and show tickets, everytime we go to Vegas. And I always compare them to all the other sites, and have found they are always the best prices, and they have great customer service.
Make sure to call the 1-800 number at the top of the page, this way you will get an instant confirmation on your room. Or tickets or whatever. When you book online, you may get a confirmation in your email, but, most of the time it's not really confirmed at the actual hotel for a week or more. So I always call. This is true of any site that you use. Here's the site:

The week before Christmas, Sunday-Thursday night, is literally the cheapest 5 nights of the entire year for every hotel in Vegas. Don't stay over Friday-Saturday because the rates will skyrocket. This year the 9th-13th and 16th-20th will have the best deals.
Booking far in advance will not always get you the best deal though - Vegas hotels will slash their rates in the fall to try and attract more business for December. But if you book now and the rates go down later they will let you rebook at the new lower rates so it's not that bad.
However DO NOT book through Expedia or one of those other travel websites, they are ripoffs and make you pay everything in advance along with extra fees, and no changes or refunds are allowed for any reason.
Always book directly through the hotel website itself - you will get a better deal and they will let you change your reservation or cancel and rebook at lower rates with no penalty.

It relies upon on the position you're coming from, the date of the week, and the time of day. there is constantly extremely some site visitors travelling to Las Vegas from California on Friday afternoon on the I-15. also, there are conventions in December which will force even more advantageous site visitors once you get in the Las Vegas metro section.

I generally find that six weeks to two months prior to flying I get the best airfare, but if you want a hotel room - reserve the room now and book the airfare separately. If you're going to do a complete package - start shopping now, and if it's a price you can stomach, snap it up right away. Supposedly, Tuesdays and Wednesdays are the best days to find good deals - since that's when airlines open up more seats and lower their rates.

Start looking now and keep your eye out. There is no specific time to book however if you are talking about being there for the holidays I would suggest booking by end of summer to secure a room.
