Shield volcanoes are created by very low viscosity lava.
Composite volcanoes are created by alternating layers of lava and ash.
Cinder cone volcanoes are almost all ash and pumice and are very loosely bound.

Shield volcanoes are formed by basalts above water. (Below they form pillow formations.)

Cinder cones are formed by ashes pilling around the volcano. They usually only grow a couple of meters in height.

Composite are formed by layering different types of lava. This allows it to grow to great heights.
