Copper bottoms are supposed to conduct the heat more evenly than all steel vessels. Cooks also like all copper utensils because there is a particular interaction between copper bowls and eggs, for instance. Copper somehow makes egg whites fluff up better. It may be an electrostatic effect of some sort.

Copper absorbs and releases heat on a more balanced surface but the copper can be poisonous if you get one that is cheaply made or use an acid based cleaner which can start to make the copper flake and get into your food...

Copper distributes heat more evenly, but you want to be careful... If a cooper surface is in contact with the food you want to avoid using an acidic food that might poison the food.
