what were some courses offered in high school that probably helped Ferris with events or gimmicks in the movie?

I don't think any courses given in highschool would help with anything he did.

That's part of the point of the movie--Bueller's day is anti-high school and gives the impression that he doesn't need formal education to do well. But there's one line during the parade scene that's like a smack in the face. Bueller's girlfriend asks his best friend what Bueller will be doing when he gets out of high school. His best friend answers (I'm not quoting exactly), "He'll probably be a fry cook."

ferris had a mind of his own. no course in the world could prepare you for the things he did. however-he may have taken a home ec. class to get that fry cook job on venus.

I'm going to guess he skipped classes.
Which would lead to him seeing how easy it is to fool some teachers.
