It's not just the taste, it's the texture of institutional food that's disgusting. Remember, when cooking for large numbers you have to use ingredients like dehydrated eggs -- real eggs, yes, but packaged in boxes and treated with who knows what chemicals to extend their shelf life. Then, mixing with huge machines also affects the texture of food; mass-produced baked goods tend to be dry and flavorless, at least IMO.

Just two of many reasons why breakfast at home tastes quite a lot better than breakfast in a hospital or school or any other institution.

Probably because it has to be as cheap as possible, has to be cooked quickly and for a large number of people, and has to be relatively nutritious all at the same time. Same goes for school cafeteria and airline food. Most of it comes out of a can, the freezer or is processed to last a long time and be super "safe" (with no exposure to bacteria, etc.). Also keep in mind that hospitals have to avoid excess salt and sugar (thus taking away flavor) and they make food easy to digest for patients who can`t swallow very well after being in surgery, etc (thus, not the nicest texture either).

Hospital food is usually lousy because it has to be cheap and easy to produce,be healthy, and must be able to feed the most amount of people possible with alimentary restrictions.
Food is usually made tastier by adding spices and/or salt. Both of these aren't good for people that are ill, so spices and salt are kept to a bare minimun, causing the food to taste like cardboard in comparision to what we are used to at home.

Because they don't add extra fat or salt. Or fry anything. It's all baked or steamed. It's actually what you should have been eating all along so you don't end up in the hospital needing a coronary bypass.

Mainly because it's pre-cooked and then just warmed through at the hospital

Maybe it's coz they can't add spices and seasonings because of everyone's diet requirements. They have to make it bland and in such large quantities.
