NCAA Football since Arena is still just a novelty and not really Football. Although a good fix till the real deal comes out.

It depends what you want: The NFL has the best athletes, but also has a lot of other stuff, like contracts, sponserships etc. Its a lot about football but also a lot about business. I think the NFL is the best to watch and follow, because its fast, and there lots of analysis that can hold interest between games etc.
A lot of people prefer NCAAF because its more pure. No business really, just young athletes trying to play hard to reach the next level. Very entertaining, also because of the types of players you get. eg. a lot more younger QBs that can still run. Fun to watch, and actually only about football 90% of the time.
Arena football is all about 90% entertainment, with very little analysis (from my opinion anyway). High scores and lots of passing pulls in crowds, and I do enjoy watching it, I just not enough of a thinking man's game to beat the NFL or the NCAA. It is however, the only league played in spring, which gives it quick fix points.
Look up the All American Football League, when it comes in '08, its will give the AFL a run for its money. It will be a cross between NFL europe and NCAAF that I think will take away a lot the the AFL's interest.

i like all three a lot, but in order i would have to say it goes like this:
1. ncaa: this is the purest form of the sport and it is great competition...as someone else mentioned, i think the best aspect is the many differing styles of play, not just on the offensive end, but also on the defensive end with such schemes as the base 3-3-5 or 4-2-5 which you would never see in the nfl...i just wish the formula for determining the national champion were better
2. nfl: it's great because of the parity and the unpredictability, with the implementation of the salary cap and free agency any team truly can win on any given sunday...however, i believe many of the rules changes made by roger goodell have taken the emotion out of the game and also put quarterbacks in a bubble
3. arena football: it's pure entertainment and excitement, and the strategy differences are interesting...but again, as has been mentioned already, it is not much of a chess match as 11-on-11 football

In terms of pure excitement, the AFL beats both the NFL and NCAA. The shorter field and always running clock speed up the game and there is alot more scoring. The "Elway Rule" has made the game even more exciting by increasing the amount of running plays which actually, believe it or not, drives up scores because it used to be impossible to score on the goal line in the AFL, but is now easier.
However, NCAA has to win out because of the diverse styles of play (There are Hawaiis that pass every play, option teams that run so much that 1000 passing yards is considered good, and balanced teams) and the atmosphere (NFL games are attended by 80,000 at best, AFL games by about 20,000 if you're lucky, but colleges routinely draw over 100,000 at the elite schools). The NCAA can be just as competitive as the NFL, as long as elite teams are playing each other. Nobody from a "major" conference made it undefeated last year, only Boise State (which beat some top caliber teams such as Oregon State and Oklahoma). The NCAA is also helped by the 25-second play clock. It's definitely easier to play with a 40-second clock than the 25-second one colleges use that requires teams to rush their play calls. You'd think the NFL would have adopted that by now.
NFL games are usually competitive, but that's because every team has at least 1 major flaw. There are also lots of sleepers every year. Baltimore VS Denver, Baltimore VS Cincinnati II, Green Bay VS Minnesota II, and Baltimore VS Indianapolis are a few examples from prime time. The San Francisco VS Seattle primetime game was a sleeper, until the 4th quarter. In terms of talent, the NFL is the best by far, but its not as strong a product as it should be, especially when the majority of the news about the NFL is about some player getting arrested (Why does the media even report that stuff? It isn't any of their business or ours.).

NFL has many highly tuned athletes and are consistant with their moves. although they still have a contract to follow and may have to ease up on the contact to have a long healthy season.
NCAA has many young players that still rag-out their bodies, but at the same time mistakes are made too often and may lose a fan or two.
ARENA FOOTBALL consist of players who come from Semi-pro, college, and retired NFL players so theres alot more all around action. 6 on 6, Faster pace.
They are all the best!

NCAA cuz in the nFL theres no real upsets but in NCAA they got rankings and there is tradition. Players are not playing for money but just cuz they wanna win. Who even watches arena football anyway?

Personally, I like the more competitive nature of NCAA. It's still more pure because these athletes still have something to push for. The game hasn't become "completely" corupted yet. Although the NCAA is getting more than it's share. LOL.
Anyway, I'd rather watch a bunch of decent talent young guys busting their hump to win a game and get to the next level(most will never and still bust tail for love of the game) than some millionaire busting skulls, panting his way through a game just get to his next signing bonus.
Arena is just a novelty to me. Not much better than the CFL.
Great athletes at all levels, just my personal feeling.

NCAA defiantly!! The passion of the players is unreal! These players are all playing their hearts out because if they play good, then they get big money for playing good at another level! Besides, the overtimes and fan base are so great!
