If I take the SAT once, just for kicks this May or June, study like hell during the summer then take it during October or November, will all three scores be combined? Or can I choose which score to submit?

Colleges will look at your highest score to determine admission. Some will even take your highest math score, your highest reading, and your highest writing score, even if they weren't on the same day. There is no downside to taking the SAT multiple times. The worst that can happen is you don't increase it, the best is that you do. Submit all of your scores to as many colleges as collegeboard lets you each time. If you want to submit to another college later, it will cost you extra.

The scores are combined (averaged out )
