There is a gentleman by the name of David Lambert who recently has been offering a series of soap-making essays on one of my mailing lists. In these essays, he covered a number of your questions. Try googling him and see what you can find!

I made soap for years. All you need to do is to think of what the use is. The only thing the fat does is determine the consistency of the finished product. Lard makes great laundry soap. The soap is extremely hard, and you have to put it through a grater, of some sort. Duck fat makes a softer consistency, and can be used for bathing. I don't know if coconut oil can even be used, but I would guess it would make a mushy consistency, like hand washing.

I would hesitate to use it on my hair. For centuries people did, but I still wouldn't.

You're going to want to run any recipie thru a lye calculator to get the properties you're looking for. My favorite is: http://www.soapcalc.com/calc/SoapCalc.asp

It will show you the individual qualities of the fat you choose and the combined fat quality as well as the fatty acid content of your soap.
