The best anime series I've watched are Gundam SEED and Trinity Blood. After that it's Ouran High School Host Club and I recommend:

Neon Genesis Evangelion is by far the greatest Anime ever produced. The impact of watching the Feature length movie finale after watching the series is incredible. None of the newer Series, like Naruto or the like even come close.

Rurouni Kenshin and Full Metal Alchemist. Both Excellent both are must see shows. Let me give you a little sneak peak of both in my own words: *Spoiler Free*
Rurouni Kenshin is the talk of a wandering samurai that came out of the Meji era where he was known at Betousai the manslayer. Legend has it that he slayed over 1,000 men and was regarded the supreme samurai of the time. Year later no one knew what happened to him as if he just vanished out of picture... Turns out that he is hiding his past and becoming a wandering samurai where he vows never to kill another man but to help and protect others and nothing more. He meets a woman named Kauru who tells of a man impersonating the betousai will he be able to keep up his vow of never killing again? With a blend of funny humour and excellent action Rurouni kenshin is a series that is not to be missed.
Full Metal Alchemist is the tale of 2 people, Edward and Alphone in their search for the philosphers stone which is said to bring those not living in this world back to life... years ago they tried bringing back their mother to life but thus it left edward with a chainmail arm and alphonzes body was bonded to metal armor. The 2 search for the philosphers stone for bringing back their mother what starts off as a simple tale involves into something unimaginable (which I will not go on further about because I dont want to spoil it)
Kenshin is about 100 episodes long and also has a series tied into it called Samurai X
Full Metal Alchemist is 50 episodes long and has a movie that is the sequel of the anime.

Dragonball ,Z ,Gt I hate they canceled it it was a series that no one could duplicate Akira gave us something we never saw fast paced fighting unlike those slow punches the other guys show.A level of power never seen outside a comic book with universe busting atacks. It was voted tv guides number 1 action cartoon ever and fight scenes in an animated series.Marvel or DC never came with anything like it.Dbz was the best in terms of action and power. And They should have kept it going maybe a Dragonball Universe with Goku facing Hells warriors. Also it gave use a hero unlike any other what other hero is kind hearted playful and lovable but is a true beast in battle with compasion for all living things.Dbz Rocks

Fruit's Basket is a lot like Ouran HSHC in tone, and is one of my favorites.
After that, either Cowboy Bebop or Peacemaker Kurogane is probably my second fave, but they're both shounen and much more violent. (Bebop, if you're not familiar, concerns bounty hunters in space and is considered one of the best anime shows around; Peacemaker is historical, and follows the Shinsengumi during the Meiji Revolution in the 1800's.)

Probably Azumanga Daio because it'll probably be the most random anime anyone will ever watch. Also I really like Fushigi Yugi, and Hellsing is pretty good.

Fate/Stay Night was one of the best anime i've watched with great storyline and graphics.
Berserk was THE BEST. You have to see it. Watching it makes me sad all over again. I hope they make a continuation series of this.
Naruto would be my third favorite.
