Any one of those three would be respected by medical schools, and all of them have departments which would give you a good grounding in the sciences, which is the idea of a pre-med degree. Congratulations if you have been admitted to all three; you can make your choice based upon other factors, like where you want to live.

You will get a good education at any of these. It depends how focused you are and how social you are. I would avoid Irvine (the town) if you are not ethnically White and well-to-do, as the community trends strongly that way. UCSC has more cultural benefits/distractions than the others, and you would be a bit more comfortable there if you are politically liberal. Irvine is kind of a new place, if you like things (dorms, eateries, etc) to be unworn, Irvine has the edge, and Davis the least. I think UCSD has a bit better reputation among the laymen, Davis is an Agriculture-type place and the Veterinary dept. is renowned more than the Med. You are lucky if you truly have the choice to go to any of these.

i am in the same situation too! I am actually thinking of attending San Diego because out of the 3 it is ranked the highest. I have heard it provides an amazing education with opportunities to do lab research early on. Good luck but I recommend to visit each and see which school you feel most comfortable in. :) Maybe ill bump into you at school one day tehe

You should go to UCSD. It is well known and well respected for their science programs, especially biology.
