I like semi-extreme rides.
Love adventure.
Fall asleep or grow board on slow rides.
And, I like sealife.

I've never been to Universal, but the only ride that looks like it might be extreme is Revenge of the Mummy, since it's a roller coaster.

None of the rides at Disneyland are extreme, so you will probably like them all. Some of the more adventurous ones are:
Space Mountain
Splash Mountain
Indiana Jones
Matterhorn Bobsleds
Big Thunder Mountain
Pirates of the Caribbean
Soarin' Over California (California Adventure)

I don't know what you consider extreme, but if you don't like large roller coasters or drop rides, these California Adventure rides might be too extreme:
Tower of Terror
California Screamin'
Maliboomer

If you really hate slow rides, these might be boring for you:
Alice in Wonderland
Snow White's Scary Adventure
Pinocchio's Daring Journey
It's a Small World
Storybookland Canal Boats
Jungle Cruise

I think you should try all (or most) of the rides at Disneyland (even the slow ones), because they're really well done and far from boring!

Universal Studios:

Mummy (roller coaster; no loops)

Shrek (really cool 3D/4D)

MIB (interactive ride simulator)

Islands of Adventure:

Spiderman (must do ride)

Jurassic Park River Adventure (awesome water ride)

Hulk and Dueling Dragons (intense roller coasters)

Disney is more for younger kids, but they have a few cool rides.

Rockin roller coaster (MGM)

Expedition Everest (Animal Kingdom)

Test Track (EPCOT)

Magic Kingdom has the most kiddie rides, but they do have a few mild rides to offer.

You will have a good choice, just don't get on the roller coaster.
