In the wild they eat worms, small fish and various bugs they can catch. They are also scavengers and will eat dead fish and the like, basically anything they can find. You can feed them worms and small fish for a week or two then change them over to food pellets. You can get excellent channel cat feed at your local farmers cop-op. It may take them a week or so to start eating it, but they will eventually.

I agree with MM - if it fits in their mouth, they will eat it.

I've raised one from a 3" size to over 2 feet. They will eat almost anything, but I've typically stayed with one brand I found in a local farm store made specifically for pond fish: http://www.nutrisourcefeed.com/farmpond.htm
It costs around $8-10 for a twenty pound bag, so it's more economical that what you'll find at a fish/pet store.
