Assuming you call it in immediately, and make arrangements to have it removed by a tow truck, they will give you HOURS to get it done, not days. You can't just leave a car on the side of a limited access freeway anywhere, but especially in CA and expect it to be there when you get back to it.

So call the tow truck and get an estimated time for them to get it, then call the CHP and let them know it will be gone in that time.

It will depend on the area. There are some areas that will tow your car in 6 hours or less because of vandalism/theft problems. Other areas will let it sit 24-48 hours and there are some (rural) that might leave it for 72 hours.
Best bet is to call the CHP and ask about the specific area.

If it's in Los Angeles, it will be stolen before anyone has a chance to tow it. Seriously, it depends if it's a hazard or not. Never more than 72 hours.

Unless it's dangerous, a lot less.
