(I'm very interested in demographics, and would like to take a class dealing with it at my (very large) university.)

Yes -- try Geography and Sociology departments.

Our school has a statistics class dealing with demographics so you might want to check there. If not, I would guess in the sociology department.

Economics and marketing departments love that kind of stuff. Also political science on occasion, sociology...

Statistics (if your college has it).

Geography has a bit, but it would have to be political geography rather than the other type.

yup.
theres political geography and other types of geography that would cover demographics.
look in the catalog or contact the department dealing with geography.
