The reaction with phenylhydrazine is not actually a hydroxylis but results in formation of the hydrazone. It will take some time because "sucrose" [actually 2-O-(alpha-D-glucopyranosyl)-beta-D-fructofuranoside] must first hydrolyze to the components glucose and fructose which in turn react with phenylhydrazine. The hydrolysis of the disaccharide is acid catalyzed and begins with protonation of the acetal oxygen atom.
