Nothing defies the laws of physics, ever. There is no plea bargaining in the universe, the law is the law, and everything has to obey it, period.
Safety features in cars include: crushing zones, reinforcement in strategic places, airbags and side curtains, seat belts.
Other features increase safety by helping avoiding being in an accident in the first place: traction control, anti-lock brakes, well inflated tires, good illumination.
If you want a relation to Newton's laws, then the airbag, seat belts and crushing zoens help reduce the rate of deceleration on a human body, by spreading the deceleration of an impact over a longer period of time.

Nothing can defy the laws of physics. The laws happen all the time under every circumstance. Nothing can change that. There are safety features in cars that DO follow Newton's laws.

Your question is nonsensical. There are no safety features in cars (or anything else) that "defy the laws of physics." Natural laws, unlike human laws, are self-enforcing. You can't "violate" them, only suffer the consequences of the stupidity of thinking you can get away with "violating" them.

Safety features use the laws of physics to minimize the harm done by people dumb enough to think gravity or inertia laws don't apply to them.
