where I'm currently living is a major apple growing region. we grow all sorts of varieties here!
I've tried them all and I must say I like the royal gala variety best (they've got a mottled red and yellow skin). they're not quite as sweet or as juicy as the ambrosias (that look similar) but they are crunchier, crisper.
(btw: I HATE red delicious apples! they are great when fresh, but if they get the least bit old, they are the nastiest, chalkiest things you can get - they were the bane of my childhood!!)

edit: fuji and spartan varieties (both red) are good too. although, I must admit granny smiths (green) make the best pies...

Both. I like the sweet sour taste of the green, but I like the crisp sweet taste of the red too.
