According to the official Peanuts website, Woodstock was a small bird. It says that he talks birdspeak only and so he made up an alphabet full of exclamation points in order to express his emotions.

Woodstock was a little bird. Not too clear on the "I I I I I " meant either. But I guess that it was up to the readers imagination.

in the very first cartoon strips when woodstock was introduced he was just a garden bird with quite a pointy beak, then as the strip progressed he developed his own personality eventually becoming snoopys sidekick and even having his own "cub scout" friends ie Bill (who looked a lot alike lol) snoopy is a dog,
best friend woodstock,
owner is charlie brown,
brother is spike,
sister is belle....

It doesn't officialy say what type of bird Woodstock is, but is just claimed as a small bird. I rekon woodstock is based on a canary.
