dont sign Check with labor laws or if you have a union it will be discussed in the contract.
say you dont feel comfortable signing that and if possible just dont work overtime

You can sign it, but why would you want to? You deserve to get time and a half for overtime, according to the union contract, or collective agreement.

No, check out the Department of Labor. Employers are required to compensate for additional labor unless your are excempt under the salary rule.

If you signed a 'work agreement' saying as such then most likely, that is here in Australia anyway, employers can pretty much put whatever they want in the contract, and if you have signed it then that is your agreement.
