Its summertime in Jan but these days, u really cant be sure about the weather. Anyhow expect lots of sun, go with cap, sunnies, sunblock, sexy outfits, street casual cool. Outfit tip - comfort, cool, chic and fun.
True Sydney?! Well not sure what constitutes "true" Sydney but I can share a few pointers from a "touristy" point of view. Bondi Beach is great during summer - for sure. Spend some time on the beach or just having brunch at the many chic restaurants that has sprung up at the Bondi precinct. (You see Bondi is not just about beach, it has lots of popular lifestyle eateries - Hugo's, Icebergs, Ravesis, there many quaint cafes and shops in the area to browse).
Sydney Fish Markets. Great place for cheap fresh seafood and also other ready cooked hot food for a hearty breakfast or lunch. Oysters, abalone, lobsters, prawns, all sorts of fish (yummy fresh fish & chips!!!) etc, the markets also has a supermart with fresh farm produce and shop selling wines & cheese.
Yes do the Bridgeclimb, honestly the view and the experience is memorable. Its adventurous and uniquely different. We always look at it, but u just cant beat being on top of the bridge!
Darlinghurst. How can you miss Darlinghurst?! Its such a pretty unique precinct in Sydney! Its like the chic cool eclectic neighbourhood area of Sydney city. It has many chic cafes, quaint fashion outlets, quirky stores, and also carries many of the most popular Aus or international brand names. I really like exploring the weekend market too - Paddington Markets (open Sat only). Even if you are not into shopping, its still an interesting place to explore, have a quick look, stop at a cafe and have a chill afternoon. Its called lifestyle. (And oh, my personal favourite eatery/cafe in Darlinghurst - bills. The hotcakes with ricotta cheese, honeycomb butter & bananas is HEAVEN in the mouth... oh....)
The Rocks. The historical part of Sydney. Gotta have a look. Cobbled stoned paved streets. Weekend is more lively and vibrant with street entertainment and a weekend market.
Sydney is a diners paradise. Indulge. Definitely. You can find Italian (Buon Ricordo), Japanese (Tetsuya), French (Marque), Chinese (Billy Kwong) to Modern Australian (Boathouse OR Rockpool etc etc... too many!)
Everyone knows about the Opera House. It sounds slightly cliche but surely if you are in Sydney you gotta at least look, visit or get near to the Opera House. Even better, I would strongly suggest taking a "Behind the Scenes Opera House Tour", they can tell you all about the fascinating facts and history about this world famous landmark. Its educational and insightful. Consider it. You can book it directly at the operahouse but check the times.
And finally gotta say, go on a cruise - use the excuse to get from Sydney to Manly or just some regular sightseeing cruise etc whatever, just get on one. Sydney is famous for its picturesque harbour and what better way to enjoy it than on a cruise. Of course other options include the more exciting jetboat tours, or water taxi tours, whatever the case, many crusing options.
Hope these personal tips are useful!

I'm a regular traveler to Sydney and the entire Aussie east coast. If you are in Sydney only, the touristy area is called "The Rocks" - the Sydney Opera house is there and you can take in a show most evenings. They also do opera matinee's during some weekends. http://www.sydneyoperahouse.com/
If you wander to the northeast of The Rocks, there is a park with a finger of land that juts out. At the end of that is an area called "Mrs. Macquarie's Chair". Great view of the harbor, the opera house and the harbor bridge.
For very little money, you can take the speed boat to Manly - from the ferry station, you can walk to the beach and take it all in. The seasons down there are reversed (although the toilets, contrary to popular belief are not!) so as we are starting spring in the northern hemisphere, they are starting fall. It's a beautful time of year.
You can also climb to the top of the Sydney Harbor Bridge - not for the faint of heart. You walk all the way to the top, tethered to the bridge. A bit pricey, but a view you won't get anywhere else. http://www.bridgeclimb.com/
Bondi beach is world famous and a short ride away. If you are into scuba diving, there are all sorts of dives in the area.
Walking around the city is very, very safe. The area on the west side of town is a bit touristy, but fun and called Darling Harbor. Lots to do.
Mostly, have fun!!

the weather is that sort of in between now. we are seeing the last days of summer.
Beside the usual attractions ( TheRrocks, darling harbour, opera house etc...), over easter you can visit the Easter show in Homebush.
You can also make a trip to either the blue mountain or the southern highland they are beautiful this time of the year.
