They use different flavorings. Tokyo ramen is usually shoyu (soy sauce) flavored, Sapporo ramen is miso-based, Kyushu ramen (also called Hakata-ramen) is tonkotsu (pork bone) based, and Hokkaido ramen is usually miso.

豆腐さん basically said it straight. The dude by his avatar doesn't really look Black, lol. Anyways, went to Japan last summer and had both Tokyo and Sapporo and must say that I prefer Sapporo ramen. The miso taste is so wonderfully strong and could stand on its own whereas the soy based ramen only compliments the noodles vs having a strong taste.

Here are some more variations from "Planet Tokyo"...
In the Tohoku area, try Yonezawa ramen where the noodles are aged for a few days before they are boiled. Yokohama is famous for tonkotsu-soy ramen. In Chubu, try Gifu ramen known for its very soft noodles, and in Kansai, try Kyoto ramen known for its straight noodles. Shikoku's Tokushima ramen is served with a raw egg

I don't understand why 豆腐さん got thumbs down - I gave him a thumbs up. He has the best answer. Tokyo ramen is almost always soy sauce flavored, which I prefer over the pork and miso seasonings.

The basic difference between all Ramen is one (or two or three) of three things: Soup base, Noodle, Garnishing. People who try to develop a "NEW" ramen, usually try to do so starting with the soup base. Then work from there.
