The skin thing is nothing but condensed fat of milk formed on standing.milk is an emulsion of fat in water and emulsifier here is destroyed on heating so sol becomes unstable and condensation of fat takes place.

after pasterization it leaves a substence on the bottom of milk tanks that filters to the tops after a while
