Hi Nathan. Is the bike warm when you rev it a little?
Can it pull a load, eg: can you engage a gear and drive it forward under some load?
It definitely sounds like a carburetter problem. Maybe dirt or worn parts or even balancing might be the problem with which you would have to get them balanced.
If I were you, go to a reputable service centre and ask them to give your carbs a service which should include a basic rebuild kit ranging from gaskets, needle and seats, diaphrams, main jets etc and finally a balance or tune up!
It will make a world of difference but might cost a little more than what you would expect!

There might be some water in the fuel. If there was, when you opened the throttle, any water floating around in the carb float bowls would get sucked up to the jets. The water is to heavy and thick to go through the jets and just blocks them. When the throttle is released, the water would drop back into the float bowls.
Turn off the petcock and drain each float bowl into a cup. If there is any water, it would look like a jelly fish swimming around LOL - if you see any water, drain the fuel tank.
Just to be on the safe side, change the spark plugs.

Check the air intake for foreign objects. I've seen paper and a bandana clog them. Check the filters. Older bikes will sometime have junk in the tank that clogs and starves the carbs. Pull the petcock and drain all the junk from the tank, and put fresh gas in.

We need more info. But try these basic steps. Does it die when you advance the throttle in neutral? If so, close the choke.
Can you roll it freely in neutral? If not, does the bike die when you put it in gear and let out the clutch?
If so, check your brakes. Sometimes they freeze up on the rotor or drum.

Check your fule/air mix and filters all the way around, sounds like it's choking out. A check of the plugs could help in that too.

It needs cleaning, carbs are varnished up, you must not ride it all the time, you can buy gas Sta-bil, that will help.
