Fancy guppies! They are really easy to breed ( I have over 100! ) And are so beautiful, For example I have a a mom guppy that was black/orange and a dad guppy that was yellow and orange, and most of the guppies turned out to be green and orange! I wasn't really sure where the green came from but it was really fun to watch them grow up and see all of there different colors! I like livebearers in general. Guppies, platies, mollies, and swordtails all come in a wide range of colours and fin types, and they're usually quite hardy once they're established. They also give birth to live babies, instead of eggs, so that's fun too.
They come in the usual reds, blacks, and oranges that many fish do, but if you look hard enough you can find some really neat ones.
I like some more unusual fish too, but I always have at least a couple of livebearers.

Guppies are good, glofish are great. Glofish are the offspring of zebra danios which have had a gene from fluorescent jellyfish implanted. Once it's been implanted it's hereditary so they don't just keep implanting each generation. A great source of info is glofish.com. They come in red, green and orange and they glow under a black light. Because they are danios they are tough little fishes, great for beginners.

I basically have 2 favourites: Kribensis cichlid, and the time-honored suspect of the Betta. I easily have 0 Kribs (regrettably :( ) and a million betta. i could choose for to get a breeding pair of Kribs, instead of initially desirous to reproduce bettas. i like the Kribs via fact of their impressive colorations, and the fact they're somewhat much less person-friendly than the betta or neon tetra and so on. additionally i like how they're spectacular mom and father interior the fish international. I have a siamese algae eater and its my favorite out of both my fish right now. My other fish is a serpae tetra, and its cool, but neither fish vary in color. I also like live bearers, and gouramis. I like plenty of other fish, but they aren't that easy to take care of.

I'd say Anglefish too. There are different colors, black, marble, gold, white, silver.... and they're so graceful, they grow these long fronds, I don't know what they're called...but they are semi aggressive. I got a bunch of Parrot fish,
all different colors, they looked so awesom, but their color does go away after a month or so.(they are dyed) My daughter got a lobster! It is soooo cool!
It's blue&lavender! It grows, and sheds it's body...you see it's claws and other parts just hanging out...I think they may eat it, cause it dissapears, and then they have this new bigger body! I want to get one!

Bettas would probably have to top my list that meet your requirements. Another group of fish that meet your requirements are killifish. Not always easy to find at the local pet store, but worth looking for.

I like raising Convicts best, but I bet you would like Killifish or apistos more since they're more colorful.
Kilifish are easier & more colorful. Apistos have more variety of body shape & personality.
Apistos are pretty rewarding also since they form mating pair bonds & protect their young.
You can buy kilifish eggs dried & hatch them which makes buying them via internet pretty easy.
Also, Fancy guppies are super easy to take care of, breed, and they have tons of color (one of the easiest fish to care for).
