Court stenographers: please tell me!?

When I watch you (on TV at least) it looks as if you're hitting the keys by dancing both hands, all fingers of both hands, simultaneously, and it makes me wonder how any words could be selected or recorded. What's really happening at such a keyboard? (It doesn't look like a typewriter!) What gives?

My daughter use to be a court stenographer, the machine is like a typewriter but it has words instead of letters on it. Easy to learn.
