Most definately EPCOT.
I was 40 when I made my first trip to WDW, been to Disneyland many! times.
While I loved the other parks for which ever reason, EPCOT was the most interesting. The fact that it is really two parks combined is part of it. You could easily spend more than one day going through Futureworld, and spend your evenings sampling the foods and shows in World Showcase. If you happen to be staying at Disney Boardwalk or at either the Dolphin or Swan Resorts you can walk in the back entrance. Another great thing about EPCOT is that there is a second entrance not many people know about so you miss some of the long entrance lines and the crowds of people heading for Mission Space or Fast Track.
When at EPCOT, there are so many hidden things that people don't usually discover, talk to cast members! A guided backstage tour at the Land Pavilion, for experienced divers they can go swim with the manatee's at the Living Seas.
Go slow, take your time and just enjoy it!

Every park in Disney is fantastic, you really can't go wrong. However, if you really want to have a full, action packed day, Animal Kingdom and MGM Studios are smaller parks, therefore don't take as much time.
For adults, EPCOT tends to be the most popular park. The dining is great, World Showcase is really interesting, the rides are a blast, etc. The park is quite large and can take several days to see everything, so if you have one day, you won't be dissapointed and not have something to do the whole day.
Magic Kingdom is also a large park, so you would have plenty to do as well. This park is a little more popular for younger children because of the rides, characters and things like that, but it can still be fun for adults. The rides are cute, the shows are great, fireworks are fantastic, parades are amazing, etc. Magic Kingdom is the best way to go and really see Disney, and what Disney is all about.
Again, all the parks are great, I don't think you will be dissapointed with any choice you make.

I would have to say it is a toss up between Magic Kingdom and Epcot. Epcot tends to appeal more to adults with the different countries to visit, along with some of the more intense rides like Mission Space and Test Track (not intense, but really fast!) The Magic Kingdom brings out the kid in everyone, no matter if you are a Disney freak like me or not. There are tons of rides and attractions, it just depends on what you want.
I would recommend going to the Disneyworld website and checking out all of the parks. You can do a comparison between the parks, and even mark favorites and "must see" attractions. I personally would really have a hard time choosing between any of the 4 major parks. Also, pick up the Birnbaum's guide to WDW. There are tons of guide books out there, but that one has been the best for us. You can get some real good descriptions from both sources.

I would have to say Epcot. I am not sure if you two are thrill seekers, but if you are not they do have a LOT of calm rides that are fun such as Soarin in the Land. They take you up in the air and it feels like you are hang gliding over rivers, mountains, valleys...etc. There is also Spaceship Earth that is one of my favorite rides, and the Seas with Nemo where you can see the characters from the movie plus other aquatic animals. If, on the other hand, you like thrill rides, then Test Track is a must.
Also, the World Showcase is a wonderful place to shop, eat, see live entertainment, and to really appreciate other cultures around the world. My family loves going to EPCOT, whenever we are in the Orlando area that is one park we always have to come back to. If you would like to see pictures and read up on all the wonderful things there is to do in Epcot, I would suggest you check out allearnet.com. They are my #1 source whenever I am heading down to see the "Mouse".

Magic Kingdom will get you the overall Disney experience and they have the most rides. If you want to go a little more adult-friendly then Epcot would be good because it's "a trip around the world". Have lots of fun!

I would say Magic Kingdom is the best bet. It's the one they show on all of the commercials, and the one that you will remember the most. You will revisit your childhood on all of the rides. Epcot would be next. You would probably really enjoy the rides and international area. Animal Kingdom you can do in a day, or less.

Hard say but Magic Kingdom has the castle. You must see the castle in person. That's when you know that you are actually at Disney world. But it is best to see all four parks because if you dont, you would be cheating yourself. Try to get a park hopper it is worth it.

MAGIC KINGDOM! I have been often to the Disney parks and STILL get warm fuzzy feelings as soon as I walk in and see the castle! It's the best "first stop" on your way to sharing in the magic! Have a great time and take tons of pictures!

epcot- the least cheesy of them all and you get to get pretty good food in a country (ie. nation states) themed restuarants. That and downtown are the only places with alcohol!!!!
book the restuarant as soon as you arrive.
also take the internal bus to downtown later for a proper drink at the end of the day
