I would think you could:
1. open my computer icon-
2. then either click the C: drive or *my Documents*-
3. look for the "create New folder" and click it
4. a new manilla folder pops up with the name highlighted in
blue
5. if not highlighted click so the cursor is shows up and type
the new name you wish it to be named... i.e: My Portfolio or
put the class name in there- My IST226 Portfolio
6. Copy and paste the documents you need to into the new
folder or you could drag and drop them into the folder too.

Voila- you have your portfolio. Hope this helps- good luck!

A portfolio is another use for the word Database.

But you do not need to learn all about databases for this to work.

Create a folder on your c: drive or if you prefer in My Documents.
Call the folder Portfolio
Create another folder called work.
Place an item of work in the work folder.
Now you need to create the index.
This can be a word document or an excel spreadsheet. Choose whichever you are comfortable using.
Create in the index some titles, a work date and a description. You can even make use of hyperlinks to point to your work. In word you can use a table to place the details.
Now save this in the folder Portfolio.

Keep it upto date and that is all there is to it.
