Legal custody refers to who makes the decisions for the child.
Who selects the schools, signs the permission slips, and handles any other legal or administrative decisions.

It is completely independent of physical custody, which defines who the child lives with, who actually buys the clothes and food (regardless of who is ultimately paying the bills), etc.

"Legal custody" means the court has entrusted the custody of a child to one parent or to another person (usually called the "legal guardian"). The parent or guardian is then responsible for the health and welfare of the child.

Every state varies, but mostly it just means that you give the ability to make legal decisions to someone else. It can mean that you have given up the rights but again it all depends on the state. Talk to the lawyer that you used to get the papers written up.

It means that you are no longer the legal guardian of your son. For all intents and purposes your mother is the one that has full responsibility of him.
