I know they have an awesome display at McCarran of all the commercial airplanes that have landed there. I'm not sure if there is a place at the airport that would sell them.

I did run across a place close to the downtown Fremont Street area that made scale models of both military and commercial aircraft out of wood. These were very-very nice models and not really all that expensive.

There is a place online that sells military aircraft, you might give them a try, to see if they could hook you up with a commercial aircraft builder.

I have never been to their Vegas store personally but I see them advertise in Airliners:

If you are interested in models of civilian airliners you will find a much better selection by shopping at any of the dozens of on-line dealers.
