In an automated fashion, I wan't to copy over specific folders from my computer hard drive to my external hard drive. What is the best software?

Here is a long list of freeware programs that will do simple backup tasks like that:

Try a few at your own leisure until you find one that you like. Most are very easy to use & configure.

I think the best you can find is Acronis True Image. It has all features you need for secure and fast backup/restore. It has a scheduler and can perform incremental backups. Learn more about it here: http://www.acronis.com/homecomputing/products/trueimage/

I would recommend Norton Ghost for such a task.
