Tubby is a good coach but the blue mist didn't like it that they lost to good teams, and he was tired of waking up every day knowing that there were sites like firetubby smith.com, He didn't want to hear it, so he left for a smaller college.

Tubby Smith didn't quit. He was asked to fire all of his coaching staff. He obviously is too good of a person to do that so he resigned instead.
*His coaching staff was going to be fired because they are part of the recruiting process, and they didn't take Brewer(Florida) or Lofton(Tennessee)

I think he left before he was forced to leave. With all of the Kentucky fans not happy about missing the final four the last nine years, I think the boosters had lost patience with him, and when Minnesota offered him the golden parachute, and probably a nice piece of change, he decided to bolt.
